Simple Peach Protein Soft ServeMmmmm…there’s nothing quite like biting into a perfectly ripe peach.  You know, it’s got that golden almost “sunset” colour with just a blush of coral pink on its fuzzy cheeks?  And no matter how delicately you try to do it, you always seem to get the sweet peach nectar dribbling down your cheeks?  Well, I’ve managed to combine that warm, sweet taste of summer with the creamy coolness of soft serve ice cream in this HIGH-PROTEIN, LOW-FAT peach soft serve.  It’s only got THREE ingredients and it’s easy-peasy.  Bonus: no wet wipes needed to clean up the peach juice on your face!

Have you every used the expression “peachy” or “peachy-keen”?  I’ve used both, and I’ve always took them to mean that things are good/great/grand/wonderful.  In fact, I’m such a “word nerd” that I had to look up the etymology (et·y·mol·o·gyˌedəˈmäləjē/noun: the study of the origin of words and the way in which their meanings have changed throughout history) of those expressions.  Apparently they were pretty popular expressions with teens in the 1950s.  And no, I’m not quite THAT old.  Thankfully at least I was right about the meaning of the phrases, although I didn’t know that when adults used the term it was in more of an ironic sense, so that things weren’t quite so super-cool after all.

Back to the peaches in this recipe, if you don’t have easy access to frozen (or fresh) peaches, you can also use canned.  Just drain and rinse the syrup off, slice (if buying whole or halved canned peaches) and freeze in a baggie or container.

Add the “usual suspects” of almond milk and protein powder and process in a high-speed blender or food processor.  If your blender has a tamper, use it to press the frozen peach slices down during blending to ensure you get a creamy, soft-serve consistency.

If not, stop processing periodically and press the pieces down to the blades.  You’ve got the right texture when it looks like this:

Simple Peach Protein Soft Serve (Gluten-free, Low-fat, Refined sugar-free)

This perfectly peachy frozen sweet treat is a high-protein, low-fat alternative to ice cream and is free of refined sugar, too!

INGREDIENTS
1/4 cup (62.5mL or 60g) unsweetened almond milk
1 scoop (28g) Quest Nutrition Vanilla Milkshake Protein Powder* OR your favourite vanilla whey protein powder PLUS 1/2 tsp (2g) xanthan gum* (this is an optional thickener and it is not required if using the Quest Milkshake Powder, as it already contains the thickeners cellulose gum and carrageenan – check the label of your protein powder for these items)
2 cups (280g) frozen peaches

INSTRUCTIONS
1. Add all ingredients in the order listed above to a high-speed blender (like a Vitamix) or food processor.
2. Begin blending/processing at a low speed and slowly increase the speed until you have a smooth and creamy soft serve consistency. You may notice the blending sound gets lower in pitch as more air is whipped into the mixture.
3. If equipped with one, use your blender’s tamper throughout to press peaches down to ensure even blending. Otherwise, periodically stop the blender/processer and press pieces down with a spoon or spatula.
4. Serve immediately.
