But it’s one of those ideas that often seems better in theory than in practice. But when the pancakes are perfectly moist, fluffy and flavorful – then they are a GREAT idea. And I promise you that these pancakes are perfectly chocolatey, with just the right touch of sweetness and a subtle hint of peanut butter to complement the chocolate. You’d never guess that they’re good for you or that they boast a whopping 42g of protein per serving and yet are lower in fat, carbohydrates and calories than traditional pancakes! They’re even gluten free! Miracle of miracles – how is this possible?

As I alluded in the intro, I have suffered through more than a few promising protein pancake recipes that ended in disappointment. Various high-protein proponents promoted these pancakes as the perfect recipe. Some of them even looked and/or smelled great all the way through preparation and cooking and right onto my plate. But inevitably, that first bite was a let-down: rubbery, spongey, soggy or some other version of just “not good.”

I’ll admit I was skeptical when I saw this recipe, but the photo (and clearly just a nice at-home amateur photo from the recipe author and not a photoshopped professional-grade photo designed to fool the eye and mind) was appealing enough that I just had to give it a try. I was so impressed that I had these for breakfast two weekend mornings in a row – and that’s saying something when you consider just how much I love breakfast and just how many wonderful breakfast recipes there are to try, both on my own blog and all over the Internet.

I instantly contacted the recipe author and asked for her permission to publish her recipe on my blog – the world (or at least my dozen or so followers) needs to know about these pancakes! I’m delighted that she agreed. I promise you won’t be disappointed with this recipe! Chocolate Peanut Butter Protein Pancakes

Perfectly moist, fluffy and flavourful, these are the best protein pancakes you’ll ever eat! They’re also perfectly chocolatey, with just the right touch of sweetness and a subtle hint of peanut butter.

INGREDIENTS
1.5 scoops (42g) protein powder of choice – I used Quest Nutrition Vanilla Milkshake Protein Powder*
2 tbsp (10g) unsweetened natural cocoa powder
2 tbsp (12g) powdered peanut butter OR peanut flour – I used PB2 Powdered Peanut Butter with Premium Chocolate*
1/4 tsp (1g) baking powder
1 egg white
1/3 – 1/2 cup of water (as required to reach desired consistency for pancake batter – a thinner batter will yield an end result more like a crepe)
1/2 tsp (2.5mL) pure vanilla extract

INSTRUCTIONS
1. Pre-heat a large pan or griddle and spray with non-stick cooking spray.
2. Stir the dry ingredients in a medium mixing bowl.
3. Add the wet ingredients and mix thoroughly. Add water a small amount at a time until desired batter consistency is reached.
3. Pour batter onto pre-heated pan or skillet roughly 1/4 cup at a time (recipe yields 4-5 pancakes with a 4″ diameter).
4. Cook until air bubbles start to form and edges are firm. Flip and cook 1-2 minutes more until cooked through.
5. Serve immediately or pack for travel. Recipe easily multiplies for additional servings (because everyone will want what you’re eating!).

These pancakes are wonderful on their own or you can add your favourite pancake sauce or syrup. Consider serving alongside eggs and fruit and/or with nut butter spread on top to add carboydrates and fats to the meal. A fun serving suggestion is to cook large, thin pancakes (crepes) and roll up your favourite nut butter and a banana inside – try this Dark Chocolate Almond Spread* to take this meal from breakfast to decadent dessert!

    Just wanted to share with everyone that I did make these pancakes the other day and added 1 tbsp of coconut flour to the mix. Adds a little more substance and texture and of course fiber 🙂 you should all give it a try! They’re delicious!
