Salted Caramel Apple Overnight Oatmeal BowlSince apples are really a fruit of the fall, I guess I could be accused of pushing the season (but not in a lameefficient let’s-buy-new-school-supplies-in-July kind of way).  But summer makes me think of carnivals and festivals (a little shout-out for the Calgary Stampede July 3-12, 2015, a.k.a RIGHT NOW – Mr. Golden Graham’s hometown, yee-haw, ya-hoo!), and carnivals make me think of candy apples!  And deep-fried Oreos.  But I don’t have an overnight oatmeal for that. Yet. So back to the candy apples. Sticky, sweet and, well, apple-y, this overnight oatmeal has captured it all but without the sugar. And regret. No-regret oatmeal! Catchy, isn’t it?

How-To: Make Unsweetened Applesauce at Home

Ripe Apple“An apple a day keeps the doctor away.”  “You’re the apple of my eye.”  Oh, apples!  So good on their own, so good in desserts (Salted Caramel Apple Bake, anyone?), so good at breakfast (Cinnamon Apple Pie Overnight Oatmeal), so good in soup (Simple Apple Cinnamon Roasted Squash Soup)…the options are endless.  And after all of that shameless self-promotion, what about applesauce?  Well, as you know, I’ve been loving my Vitamix high-speed blender and one of their first recipes I checked out was for Cooked Applesauce.  It’s seriously JUST APPLES.  And any regular jug blender or food processor should do the trick – I’ll show you how in this “How-To” and you can enjoy healthy, homemade applesauce, free of added sugar or preservatives, any time, either as a snack or as an ingredient in a recipe.  No need to go to the store!

Simple Apple Cinnamon Roasted Squash SoupI’m always impressed by a bowl of warm and creamy roasted squash soup.  This soup is no different: the rich, earthy, subtly sweet flavour of the roasted squash is enhanced by a just-right blend of spices.  Adding apple adds an unexpected yet complementary flavour and touch of sweetness to the dish.  No matter what time of year you make it, the taste will make you think of fall with its brilliant-hued leaves and crisp weather.  Savouring a bowl of this soup is just like snuggling into your favourite cozy knitted sweater.

Not only am I impressed by this kind of soup, I’ve also been intimidated by the idea of preparing such a soup.  Not anymore!  I promise that this recipe will show you how easily you can prepare this sophisticated yet comforting dish.

(High-Protein) Cinnamon Apple Pie Overnight Oatmeal

I LOVE oatmeal.  And I LOVE apple pie.  And I LOVE the smell of cinnamon-baked ANYTHING (Cinnabon is a problem for me).  So, what could be better for breakfast than Cinnamon Apple Pie Overnight Oatmeal?  Well, in my world, making it high-protein, of course!

My mother always told me that breakfast is the most important meal of the day.  And I believed her (and still do! – technically, it’s actually impossible to truly skip breakfast because your first meal of the day is when you are “breaking your fast,” hence, breakfast!  Okay, nerd moment over.  For now).  But then there’s also the adage, “Life is short. Eat dessert first.”  I say, why not do both?
