Whipped Chocolate Protein Frosting

Whipped Chocolate Protein FrostingA thick, rich and creamy chocolate frosting that is delicious?  Easy.  But what about one that is HEALTHY, HIGH IN PROTEIN, and FREE OF REFINED SUGAR and this-can’t-be-good-for-me-but-it-really-is?  Yes, oh yes. This is the perfect topping for any of my cakes, and especially my latest and greatest Healthy Single-Serving Mocha Microwave Mug Cake.  But of course, no one would be the wiser if you just wanted to eat it straight off of the spoon.  And I certainly wouldn’t blame you.

Honestly, this post only exists to share the recipe I created to pair with my mug cake.  So I won’t bore you with mundane details of my life (although today DID feature a really awesome leg day workout and oh, I did see The Martian on the weekend and was pleasantly surprised at how good it was).

On to the chocolate!

Whipped Chocolate Protein Frosting

Rich and creamy whipped chocolate frosting that just so happens to be high in protein, fat-free, and free of refined sugar!

INGREDIENTS

1/3 cup (80g) plain non-fat Greek yogurt
1 scoop (31g) chocolate protein powder of choice – I used Quest Nutrition Chocolate Milkshake Protein Powder*
1 tbsp (5g) unsweetened cocoa powder
2 packets powdered stevia – I used NuNaturals NuStevia White Stevia Powder*
1/2 tsp (2mL or 2g) pure vanilla extract

INSTRUCTIONS
1. Put the yogurt in a medium bowl or travel container.
2. Add the remaining ingredients and mix thoroughly  – texture will be thick and mousse-like.
3. Spread generously on your favourite baked good(s) or enjoy straight off of the spoon.

Spread on your favourite cakes or other baked goods or enjoy straight out of the bowl or or refrigerate for later.  Keeps well for several days.
